Brown Rice Meatballs

2 c cooked brown rice                           

½ tsp sea salt

½ c bread crumbs                                   

1 tsp onion powder                         

¼ c water                                                

2 T nutritional yeast flakes

1/3 c pecan meal       

1 T ground toasted sesame seeds

½ onion minced                                       

½ tsp. garlic powder


Mix all ingredients in a bowl.  Form balls by hand. Bake on cookie sheet in oven at 375 °F until brown, rotating to cook  thoroughly.

Walnut Wheat Crumbles

Blend in blender until creamy:
   1 c walnut pieces
   1 c water
 
Add & blend:
   1 c water
   Â¼ c onion powder
   Â¾ tsp celery salt
   1 ¼ tsp garlic powder
   Â½ tsp salt


You may try adding as you taste the water for flavor:
                    

Italian seasoning, sweet basil, homemade Chicken-like-seasoning, about 1 Tbsp honey,  ½ c tomato sauce.
 
Pour mixture into a 2-quart saucepan & add 2 ½ cups water. Bring to boil & add 2 cups bulgur wheat
 
Lower heat to the lowest setting and cook for approx. 20 minutes.  Turn off the heat and let it cool till thick. Pour evenly onto 2 nonstick cookie sheets.  Bake at 200 °F for  3.5  hours or until completely dehydrated, fluffing or crumbling the mixture every hour with a fork. Turn off the oven and let crumbles cool thoroughly. (They will be dry & crunchy.)  Put them into an airtight container  -- they keep for weeks.
 
Crumbles can be reconstituted by combining 2 cups crumbles with 2 cups hot liquid (water, seasoned tomato juice, or broth) & cooking them over low heat until they have reached the desired consistency.


Use for any dish that calls for ground beef (ex. spaghetti sauce, tacos, enchiladas, sloppy joes, etc. )

Chicken-Style Seasoning

1  1/3 c Nutritional yeast flakes
3  Tbsp Onion powder
2   tsp Garlic powder
1   Tbsp Sea salt
1   tsp Celery seed or celery flakes
2   Tbsp Italian seasoning
1 ½ tsp Paprika
1  Tbsp Parsley flakes

Blend together and store in air tight glass container.

Sliceable Cashew Cheese

2 c water
3 Tbsp agar flakes or 3 tsp agar powder
1 c raw cashew nuts
2 Tbsp pimentos or 1 small/medium red bell pepper
1  Tbsp lemon juice
1 ½ Tbsp nutritional food yeast flakes
1 ½ tsp salt
½  tsp onion powder
½  tsp garlic powder
 
Place all ingredients in blender and blend for 1 or 2 minutes until very smooth. Pour in pot & cook until thicken, stirring constantly. Pour into container and chill.  Slice when firm.

RAW APPLE COBBLER

6 golden delicious apples, peeled & cored

½ tsp sea salt

1 tsp coriander

5 Medjool dates, pitted

1 tsp vanilla powder

1 c raisins

2 Tbsp flaxseed, ground fine

½ c chopped walnuts as topping

Place 3 apples, salt, coriander, dates, and vanilla in food processor. Process until mixture is almost the consistency of applesauce. Place the mixture in a bowl. Chop the 3 remaining apples into small pieces. Mix all of the apples together and add raisins. The raisins will soak up the juice from the apples. Stir in flaxseeds & mix well. Let

mixture sit at room temperature for ½ hour. Place apple cobbler in a pan & add walnut topping.
